1 teaspoon of maple syrup
Boiling water, enough to fill a bowl
To serve:
Your favorite instant noodles
Fried mushrooms of your choice (lightly coated in cornflour and Chinese 5 spice, fried until golden)
Spring onion greens
Crispy chili oil
6-minute soft-boiled egg
Toasted sesame seeds
Shichimi (Japanese seven spice blend)
Method:
Cook your instant noodles following the instructions on the packet.
Tip: Keep an eye on your noodles so they don't get too mushy. Nobody likes soggy noodles!
While the noodles are cooking, mix together your teriyaki sauce, soy sauce, sesame oil, mirin, and maple syrup in a bowl. Add a bit of the boiling water from your noodles and stir well.
Note: Don't worry if you don't have mirin or maple syrup. You can skip them or substitute with a bit of sugar.
Once your noodles are done, drain them and add them to the bowl with your sauce mixture. Give it all a good stir.
Now, it's time to assemble your bowl! Top your noodles with fried mushrooms, chopped spring onion greens, a drizzle of crispy chili oil, a soft-boiled egg, a sprinkle of toasted sesame seeds, and a pinch of shichimi for a little extra kick.
